Punj Caterers has its roots in Mohali at Dhantej 120. If you walked into our kitchen area, you would see a lot of big metal pots and the smell of spices everywhere. We spend most of our mornings chopping vegetables and getting the fires started early. Catering is a tough job because you have to be ready on time no matter what happens with the traffic or the weather. We work out of Dhantej 120 where we have enough space to prep for large groups of people. It’s not a polished restaurant with waiters in suits; it’s more about the actual cooking and getting the food into the transport containers. Our clothes usually smell like onions or woodsmoke by the end of the shift. We have a small team that knows how to handle the heavy lifting of the tandoors and the big serving trays. Mohali can get pretty busy, and moving all this food around requires a bit of planning every day. We don't use fancy menus or marketing tricks. We just cook what we know and make sure there is enough for everyone to eat. Sometimes we are working through the night to get ready for a morning event. It is exhausting work, but there is something about seeing the empty plates at the end of a party that makes it feel okay. We just keep our heads down and focus on the stove and the next batch of food for the next order.
