Pirates Of Grill

We are up on the 3rd floor of Elante Mall, right in the middle of the Industrial Area in Chandigarh. Being in a mall is different from having a shop on the street. You have the air conditioning running all day and you don’t have to worry about the rain, but everything is very controlled. We are at serial number 313, so it takes a bit of walking from the elevators or the parking levels to find us. Phase 1 is a busy part of the city, and the mall gets especially packed on the weekends with families and kids running around the corridors. The restaurant has a lot of seating because we get large groups coming in for lunch and dinner. We have the grills built into the tables, which means there is a lot of heat coming off them even with the AC. The staff is always moving around, checking on things and carrying heavy trays of meat and vegetables. It gets quite loud during the peak hours with everyone talking at once. We don't spend much time on fancy talk; we just focus on making sure the charcoal is hot and the food is ready. The mall security and the cleaning crews are always around, and we see the same faces every day. It’s a bit of a routine, opening the shutters in the morning and closing them late at night. We just try to keep the place tidy and the equipment working. It’s a lot of physical maintenance behind the scenes, but that is just part of being in this location.
