If you know Sector 7c, you probably know where the booths are. We are at Booth No 120. It's a small space, but we make it work. A dhaba shouldn't be too polished anyway. We have a few tables outside for when the weather is nice in Chandigarh. Most people come by for a quick bite or some tea while they're out and about. We keep the tandoor going for most of the day. The smell of the coal and the bread is something I never get tired of. I’ve lived in this city my whole life, and running this place is just part of my daily routine now. We don't have a big staff, just me and two other guys. We do everything ourselves, from washing the floors to cooking the dal. We don't use any fancy equipment. It's just old-fashioned cooking on a small scale. Sometimes the rain hits and we have to move everyone inside real quick. It gets a bit crowded then, but nobody seems to mind much. We see a lot of students and office workers who just want something that tastes like home. We don't have a mission or a grand plan. We just want to keep the booth running and make sure the food is hot. It’s a quiet life in a way, even with all the people coming and going. We are happy with how things are going at the moment.
