Our little shop is tucked into the Guru Kripa Complex near Panchsati Circle. If you know Bikaner, you know how busy that circle can get in the evenings. We’ve been operating out of this space for some time now. It’s not a huge place, just enough room for a few people to sit and the kitchen staff to move around without bumping into each other. I remember when we first moved in, the walls were a different color and we had to scrub everything down. Now it feels like home. We get a lot of locals who live around the circle. They walk over after work or when they’re out running errands. The afternoon sun hits the front window pretty hard, so we usually keep the blinds halfway down. It’s just me and two other guys running the show most days. We do the prep work in the morning—chopping onions, getting the sauces ready, and checking the supplies. Nothing too complicated. Sometimes the power goes out, which is just part of living here, but we manage. People don’t come here for anything fancy. They just want a quick bite that tastes right. We talk to the regulars about the weather or how the local market is doing. It’s a quiet way to make a living, and we like being part of the 334002 area. Our daily routine keeps us grounded and we just take things one day at a time.
