Our kitchen is located at Plot-143 in Azad Nagar, which is over in the Sunder Pada area of Bhubaneswar. The place is run by the son of Jahur Khan, and we focus mainly on Indian food and using the tandoor. It gets very hot in here, especially when the ovens are going full blast in the evenings. We spend most of our time prepping spices, marinating meat, and making sure the dough is ready for the bread. It is not a fancy restaurant with white tablecloths; it is more about the cooking and the food itself. The Sunder Pada area is growing, and we get a lot of local folks coming by for their dinner. We are right there near the post office, so it is a central spot for the neighborhood. Working as a Chef De Party means there is always a lot of chopping and stirring to do. We don't have a big marketing team or anything like that. We just open up, start the fires, and get to cooking. Sometimes the deliveries are late or the heat is a bit much, but we enjoy the work. It is a busy, smoky, and loud environment most nights, but that is how a good kitchen should be. We just try to make food that tastes like it should and keep the tandoor at the right temperature for the guests who come to see us.
