Sri Jayaram Hot Chips

If you take a walk down Satellite Road in Basaveshwara Nagar, you will probably hear us before you see us. Sri Jayaram Hot Chips is basically a one-room operation with a very large fryer that stays hot all day. We spend most of our time peeling potatoes and bananas by hand. It is very repetitive work, I will admit that, but you get used to the rhythm after a while. The oil gets hot and stays that way until we finally close up the shop at night. We don't have any tables or chairs for people to sit down here. People just walk right up to the front counter and take a bag of chips to go. The floor gets a little bit oily no matter how many times we try to scrub it down. That is just what happens when you make chips all day. We have been on this road for a good while now. You start to see the same faces every single week. Some of the local kids come by after their school lets out just to get a small packet. We keep all our spices in these big plastic tubs behind the counter. It is not like a big supermarket at all; it is just a local shop. Sometimes we run out of a certain kind of chip and have to tell people to come back tomorrow morning. We don't use any fancy packaging either. We just use clear bags and a simple heat sealer to close them up. It is just a job.
