Started the morning at six. The shutters on Service Road 18 go up with a loud bang. The air in Yeshwantpur is still a bit cool then. Inside, the guys are already in the back room with the big milk vats. It gets hot back there pretty fast. We line up the trays for the day, some jalebis, some milk sweets, and the savory bits too. The glass counter gets wiped down but there are always a few fingerprints by noon. People stop their bikes right outside in Ganesh Nager and run in for a quick box of something. Sometimes it’s a big order for a wedding, sometimes it’s just a kid with a few coins. The shelves are packed with those yellow and red boxes we use. It's a bit of a mess when the delivery truck comes with sacks of sugar and flour. We have to stack them in the corner carefully so no one trips. The fans hum all day long to keep the flys away and the air moving. By evening, the light from the street lamps hits the front glass and everything looks a bit different. We usually run out of the fresh samosas by five. Then it is just about cleaning up the crumbs and getting the floor washed down for the next morning. It’s the same thing every day, really. Just keeping the trays full and making sure the stove stays lit when we need it.
