Our jaggery unit is tucked away at 54/677 on Old Panchayat Road, right on Shree Ganesh Street. It’s a bit of an older part of town, and the streets can be a little narrow, but we manage just fine. Making jaggery is a traditional process, and we try to keep things simple here. The smell of boiling sugarcane juice is something you get used to very quickly. We have a few big pans and the equipment needed to turn the juice into solid blocks. It’s a messy job sometimes, with the steam and the heat from the furnaces, but it is what we know how to do. The neighbors around here know us well because we’ve been at this spot for a while. We aren't a big factory with automated robots or anything; it’s mostly manual work done by people who have been making jaggery for years. We pack the finished product into bags and wait for the local distributors to come and pick them up. Sometimes the supply of cane is a bit slow depending on the season, so we have quiet days too. But when the season is on, we are working from morning until late at night. It’s a modest setup on Shree Ganesh Street, and we just focus on making the product the way it’s always been made in these parts. We don't put much effort into advertising; people just find us by word of mouth. Our days are long but we like the work.
