We've been here on Jakkur Road for quite a while now. Being so close to the flying club means we often see the small planes going up while we're busy with the chocolate. It’s a quiet spot, really. Justrufs Chocolatiers Company Pvt. Ltd. isn't a massive factory or anything like that. It's mostly just us getting on with things. Most mornings start with getting the temperature right in the kitchen. If it's too humid, the chocolate just doesn't behave. We spend a lot of time hovering over the vats and making sure the batches look okay. Sometimes the machines act up or a delivery is late, but that’s just how it goes. People stop by because they saw the sign near the airfield. We don't have a big fancy storefront with flashing lights. It’s just the building here at number 9. We handle everything from the cocoa beans coming in to boxing things up. The smell is something you get used to after a while, though visitors always mention it. It’s a bit of a trek for some people to come out this way, but we like the pace of Jakkur. It’s less frantic than the city center. We just focus on the work at hand. Some days are busier than others, especially around the holidays when everyone wants something sweet. We just keep our heads down and keep the chocolate moving. That's pretty much what we do every day.
