Our kitchen and office are based in B 2 of the Shivali Appartment, which is in New Vadaj. We are quite close to the Akbharnagar Circle, which is a very busy part of Ahmedabad. Being in New Vadaj means we are right in the middle of a lot of residential areas, so we see a lot of people coming and going throughout the day. We do catering, so our days usually start very early in the morning when the fresh supplies arrive at the door. There is always a lot of chopping, cooking, and packing going on inside. It can get pretty loud and a bit chaotic, especially when we have a big order that needs to get out the door by a certain time. We aren’t trying to be some high-end gourmet place; we just make good, honest food that people enjoy eating at their parties or family functions. Sometimes we might run a little behind if the traffic around the circle is particularly bad, but we always make sure the food gets where it needs to go. The apartment space is where we do all the planning and take the orders from our customers. It’s not a showroom or anything fancy. It’s a working space with pots, pans, and containers everywhere you look. We don’t use a lot of big words to describe our cooking styles. We just use fresh stuff and follow the recipes we know work well. It is hard work, standing on your feet all day near a hot stove, but it feels good when everything is done.
