Our place is located in the Upal Apartment building over in Bapunagar. It’s right in the middle of India Colony, which is always moving. We’ve been serving food here for some time now. It’s not a big five-star setup, just a kitchen and some tables where people can sit and eat. Most of our regulars live right here in the apartments or work nearby. We start early in the morning getting everything ready for the day. The smell of the stove going is something you get used to. Sometimes we run out of things if the market was short that morning, but we just make do with what we have. It’s a family-run kind of thing, so you might see the same faces every single time you walk in. We don’t spend money on big signs or fancy decorations. The walls are plain and the chairs are just sturdy. We focus on the cooking part because that is what matters when people are hungry. Bapunagar can get pretty crowded, especially in the evenings, but our little corner stays pretty steady. We wash the floors every night and start over again the next day. It is hard work being on your feet all day, but it’s what we know. We just want to make sure the plates are full and the tea is hot when someone walks through the door without making a big deal out of it.
