The kitchen is over at K-1/67 in New Madhurika Park. It’s right in the Noble Nagar area, not too far from the Airport Road in Naroda. You can usually smell what we’re cooking long before you see the door. We do catering and manage events, which basically means we spend our lives around big pots and lists of guest counts. Naroda is a busy part of town, and being near the airport road means things move fast. We have a small crew that helps with the chopping and the cleaning. It gets hot in the back during the summer months, but we just keep the fans going and get the work done. The floors are always being swept. We have stacks of plates and crates of spoons piled up in the corner. Sometimes the deliveries arrive late and we have to scramble a bit. It isn’t always glamorous. There’s a lot of washing up that people don’t see. Most of our days are spent checking if the spices are fresh and if we have enough gas cylinders for the weekend. We've been in this spot for a while now, and the neighbors in Madhurika Park are used to seeing our vans come and go at odd hours. We just try to make sure the food tastes like home and arrives on time for whoever is hosting. If a burner stops working, one of us usually fixes it with a bit of wire and some patience.
