Running a catering business out of Gulbai Tekra keeps us pretty active. We are located in the Skylon Building, which is a good landmark if you are looking for us. It’s right near the Passport Office and just across from Kashiram Hall. We spend most of our time in the kitchen preparing for different events. It’s not just about cooking; there’s a lot of packing and moving stuff around. My team has been together for a bit, so we have a rhythm. We don't do much advertising because people usually find us through word of mouth or by seeing us at an event. The area here can get tight with parking, but we make it work when loading the vans. We handle all sorts of gatherings. Some days are much longer than others, especially when there are multiple orders. We don't have a big front office or anything like that. It’s mostly workspace and storage for all our pots and pans. When we aren't cooking, we’re cleaning or planning for the next week. It’s a busy life but it keeps us on our toes. Sometimes things get a bit chaotic when we’re trying to meet a deadline. We just focus on getting the food delivered on time. It's a simple operation at the core. We just try to do our job without making a big fuss about it. We just pack the bags and go where the work is.
