Jaymal Fatta Fast Food sits right at Shop No 1 in Aditya Plaza. We are right across from Vivekanand Society on the Jodhapur Gam Road in Satellite. It’s a lively part of town, especially in the evenings when the sun starts to go down and everyone comes out for a bite. Our shop isn't very large, but it's enough for what we do. We spend most of our shift behind the counter, keeping an eye on the fryer and the griddle. The road outside can get pretty jammed with scooters and cars, especially during the school run or when people are heading home from work. You can hear the traffic all day long. We start our prep work in the late morning, chopping onions and getting the batters ready so everything is fresh when the first customers show up. Most of the people who stop by live right here in the neighborhood or work in the nearby offices. We’ve gotten used to the same faces every day. The tiles on the floor are a bit worn from all the walking back and forth, and the walls have that yellow tint you get in a busy kitchen. It’s a simple setup, nothing too modern, but it works for us. We just focus on getting the food out fast and keeping the counter clean while chatting with the locals who wait for their parcels. It’s just how we run things here in the shop every day.
