We are located in apartment D-1204 at Seventh Paradise, right across from Silver Harmony. It’s a bit of a weird spot for a food business since it’s more of a residential-looking building, but it works for us. We spend most of our time in the kitchen area. It’s not a huge space, so we have to be organized, or we’d be tripping over each other. There is always the sound of something sizzling or a knife hitting a cutting board. We do a lot of prep work in the afternoons. Sometimes the smell of onions stays in the air for hours. We are just a small group of people who like to cook and get food out to customers. We don't have a big dining room or a waitstaff. It’s more of a practical operation. The balcony gives us a little break when things get too hot inside. We’ve had to fix the sink ourselves a few times when the plumber couldn't show up. That’s just how it goes when you’re running your own thing. We aren't trying to be the next big food chain. We just want to make decent food from our little corner here in Ahmedabad. It’s a lot of long hours, but we’re used to it by now. We keep our supplies tucked in the cabinets and just keep cooking until the day is over.
