We are operating out of House No 30 in Sharda Vihar, Phase 2. It is a residential area in Dayal Bagh, so it is usually a bit quieter than the main markets. Being nearby and opposite Hari Om Seva Sadan makes it easy for people to find the lane we are in. Our workspace is basically part of the house that we converted to handle the food production side of things. It’s a bit cramped with all the bags of raw materials and the jars we use for packing. You can often smell whatever we are preparing today from the end of the street. We try to keep things organized, but when we are busy, there are crates everywhere. The kitchen area is the heart of the place, and we keep the stoves going for several hours at a time. We use simple tools and do a lot of the sorting and cleaning by hand. Our neighbors are mostly families, so we try not to make too much noise early in the morning. We have a small table near the door where we keep the delivery logs. It is a family-run kind of thing, so there is usually someone having tea in the corner while the rest of us are working. The walls have a few marks from where we move the heavy equipment around. It is just a plain, honest workspace where we handle our daily tasks without much fuss. We usually wrap things up before it gets too late.
