Ram Babu Paranth Wale

Our shop, Ram Babu Paranth Wale, is out on the National Highway at the Kailash MOD. It’s right on Sikandra Road in Agra, nearly opposite the Marium Tomb. Being on the highway means we get a lot of people who are just passing through the city. We have been frying parathas here for a long time. It’s a very simple setup with large tawas where we cook everything. The air is always thick with the smell of butter and dough. It’s a bit of a dusty spot because of all the trucks and cars zooming by on the highway, but that’s the reality of being on this road. We don't have air conditioning or fancy chairs, just basic benches for people to sit while they eat. The tomb across the road is a nice landmark, but we are usually too busy looking at the griddle to notice the view. Every morning starts with kneading big piles of dough. We use a lot of local ingredients and the recipes haven't changed much over the years. Some people say it’s a bit chaotic when the tourist buses stop, and they are right. We just try to keep up with the hunger of the travelers. It’s a noisy, busy place to work in the 282007 area, but we like the pace of it. We are just a roadside paratha shop doing things the old way.
