Our catering setup is located on Mall Road near the Pratappura crossing in Agra. It is a very old part of the city, and the streets are always crowded with rickshaws and tourists. We have a large kitchen area where the cooks work over big open flames, and the walls are a bit stained from the years of smoke. At Agra Caterer, we do not have a fancy office where we meet clients; we usually just talk to them right there among the sacks of flour and spices. We spend a lot of time sorting through lentils and picking out stones by hand. When we have a big order, the whole place turns into a hive of activity with people chopping, stirring, and packing boxes. The metal containers we use are heavy and have a few dents, but they keep the food warm until it gets to the destination. We do not use many modern gadgets, preferring to do most things the traditional way with heavy iron pans. The noise from the crossing outside is constant, but we have learned to ignore it while we focus on the recipes. Sometimes we have to work through the night to make sure everything is ready for a breakfast event. It is a tiring job that leaves your back aching, but we take a certain pride in seeing the empty pots come back at the end of a day.
