Suresh Bhajiya House

Suresh Bhajiya House is over on Sant Kabir Road in the Pocket 1 NAC area. We focus on making bhajiya and other fried snacks. It’s a busy street and there is always something going on outside. The shop is mostly just a big kitchen area with a small counter at the front. We spend most of the day cutting vegetables and mixing the batter. The oil is always bubbling in the big kadhai. It’s a hot job, but someone has to do it. We’ve been here for several years now. We didn't really plan on becoming a big business, it just happened because people liked the snacks. We use old recipes that haven't changed much. Sometimes the salt is a little more or the spice is a little less, but that’s the nature of handmade food. We don't use any pre-packaged mixes. Everything is done by hand right here in the back. There’s no fancy seating, people usually just stand around or take their food in paper bags. We deal with the smoke and the heat every day. It’s not always easy, especially when the weather is humid. But we like the work and we like seeing people enjoy what we make. We just keep our heads down and worry about the next batch of fritters. That’s how we’ve always done it. We close up when the batter runs out for the day or the sun goes down.
