Shrinathji Lassi & Khamman

We spend most of our mornings here at Chennigappa Industrial Estate B-2 in Vadodara getting things ready. It gets pretty warm in the kitchen once the stoves are on. We make lassi and khamman every single day because that is what people around here look for. Usually, the workers from nearby units stop by during their breaks. The shop isn't very big, but it fits what we need. We stack the khamman on the trays and wait for the steam to go down. Sometimes the lassi machine makes a bit of noise, but we are used to it by now. It is a lot of standing around and moving heavy pots. We started this place because we knew how to make these two things well enough. People know where we are. We don't change much around here. The floor gets a bit sticky sometimes from the sugar, so we have to wash it down often. Life in the industrial estate is mostly about the clock. We open early so the morning shift can get something to eat. There is always a lot of washing up to do at the end of the day. We don't have fancy chairs or anything, just some basic space. It stays busy enough to keep us on our feet. We just keep doing the same routine, mixing the batter and cooling the yogurt. It is just a normal shop for normal people.
