If you’re walking down Cunningham Road in Vadodara, you’ll probably smell the frying before you actually see us. Raju Patti Samosa Care is a small spot. We spend most the day folding dough and getting the potato filling just right. It’s a lot of work for a small snack. We start very early in the morning, getting the vegetables ready and heating up the big vats of oil. The heat from the pans makes the shop very warm, especially in the middle of summer. We don't have a lot of space for people to sit down, so most customers just take their bags and go. We use a lot of onions and spices. Sometimes the flour gets all over my clothes and hair. It’s just part of the trade. My hands are always a bit oily by noon. We’ve been on Cunningham Road for quite some time now. You see the same faces every single afternoon. People coming home from work or kids after school looking for a treat. We don't use any fancy machines here. Everything is done by hand by me and my helper. It takes longer but it tastes better that way. Sometimes we run out of the spicy green chutney before the day ends. That makes some people a bit grumpy but we just make more fresh the next day. It’s a simple life. Just frying samosas and talking to neighbors. Vadodara is a good place for this kind of thing. We just keep the stove going and the oil hot.
