Our shop on RC Technical Road is mostly known by the yellow steam that comes out of the back window in the mornings. Khaman is actually a pretty tricky thing to get right every single time. Some days the sponge is just a little bit better than other days, but we always try our best to keep it consistent. We have been here in Manjalpur for a good while now. Lots of people stop by on their way to the technical college or their offices nearby. We cut all the pieces by hand with a knife, so they are not always exactly the same size in the box. We top everything with a lot of mustard seeds and fresh green chilies. It is a very simple operation we have going here. We do not have a big area for people to sit down, just a few small spots to stand while you eat. We have to start very early in the morning, around four, to get that first batch out for the early birds. The smell of besan flour is pretty much everywhere in this building. We do not use any fancy machines to do the mixing, just the old steamers and our hands. My brother handles most of the small deliveries around the neighborhood on his scooter. It is a busy life, but it is what we know how to do. We don't have a website or anything. Just the sign out front and the trays.
