We are right on the Raopura Puna Gam Main Road. It’s a busy place with a lot of traffic passing by all the time, from cars to rickshaws. At Rajbhog, we deal with a lot of different snacks and traditional items. The dust from the road is something we have to fight every day, so we’re always wiping the counters and the glass down. It’s just how it is when you’re on a main road like this. We don’t have a lot of space for people to sit, so it’s mostly over-the-counter stuff. We spend a lot of time in the back preparing the mixtures and frying. The smell of spices is always in our clothes. We don't really use a lot of technology for our work. It's mostly just hands and big pans. We’ve seen the road change over the years, new shops coming and going while others stay the same. We just stay here doing our thing. It gets really busy during the festival times, and then we barely have time to sit down or even eat ourselves. But on a normal Tuesday, it’s just a steady flow of people stopping for a quick bite. We’re just local people serving local food. There isn't any big story behind it. We just opened the shop and kept it going through the seasons. That’s about all there is to it. We keep our eyes on the stove and the customers on the road.
