Bajrang Farsan

Our little shop, Bajrang Farsan, is on Cinema Road right in the middle of Market Street. It’s an old part of town where everyone knows everyone else. The cinema nearby isn't as busy as it used to be, but the market street is still the heart of the place. We start our day before the other shops even open their shutters. There is a lot of prep work involved in making farsan, like chopping and mixing the dough. We don't have a big staff, so we all end up doing the frying and the packing. The shop is quite narrow, and sometimes customers have to wait outside if there are more than three people inside. We use traditional recipes that haven't changed in years because that’s what we know how to do. The walls are a bit stained from the steam and oil, but we keep the food areas as clean as we can. We talk to the regulars about the local news while we weigh their snacks. It’s a simple life. We don't have a website or a fancy logo. Most of our business comes from people walking down Cinema Road on their way home. It’s a bit of a struggle when the price of oil goes up, but we find a way to keep going. We just focus on making snacks for the neighborhood and keeping the store open for whoever stops by.
