Setting up Bagat Sweet here on the Manjalpur Mumbai Pune Road 1 meant dealing with a lot of traffic from the start. This road never really sleeps, so there’s always a hum of engines outside the door. We spend our time back in the kitchen area mostly. There are heavy sacks of sugar and flour that need moving every day, and my back usually feels it by noon. We aren't trying to be some big corporate chain. It’s just a place where we make what we know. The counters are filled with rows of different things we’ve cooked up that morning. Sometimes the delivery trucks are late and we have to wait around, which is annoying. We see a lot of commuters who are tired and just want something to eat while they drive. The floor gets sticky pretty fast, so someone is usually walking around with a mop. We have a few old fans that don’t do much in the summer, but they’ve been there as long as the shop has. It’s a lot of routine. You wake up, you boil the milk, you settle the trays, and you watch the cars go by on the highway. We don’t have a big sign with flashing lights, just the name on the front. People find us anyway. It's a simple way to spend the day, making sure the boxes are packed right and the change is correct.
