Kainoosh

We are located on the ground floor of DLF Promenade Mall in Vasant Kunj. Nelson Mandela Marg is always busy, and being in one of the big malls means there is never a dull moment. Kainoosh is tucked into units 122-124, right where people walk by on their way to other shops. The air in here is always cool because of the mall’s vents, which is a relief from the Delhi heat outside. We spend a lot of time arranging the seating and making sure the lighting is just right before the mall doors even open to the public. It’s a different kind of vibe than a street-side shop. Everything has to be in its place. We see a lot of people during the lunch hour and then a different crowd in the evenings. The kitchen is a world of its own, hidden away from the fancy tables out front. We’ve been operating here for a while now, becoming part of the Vasant Kunj food scene. It’s a lot of coordination between the servers and the cooks to keep things moving smoothly. Sometimes the mall gets incredibly crowded during sales or holidays, and those days are just a blur of activity. We just try to keep our heads down and do the work, making sure every plate that goes out is what it’s supposed to be. It is just about keeping the routine going every day.
