Dehli Ka Aangan

Dehli Ka Aangan is located inside the Hyatt Regency over at Bhikaji Cama Place. Even though we are in a big hotel on the Ring Road, we try to keep things feeling personal. The name means "Delhi's Courtyard," and that's the kind of feel we want for the space. We’ve been part of the hotel for a long time. The kitchen staff has a lot of experience with traditional Delhi recipes. It’s a bit more formal than a street-side shop because of where we are located, but we still want it to feel welcoming. We spend a lot of time on the details of the dishes. The Ring Road is always busy, but once you come inside, it’s much quieter. We serve people who are staying in the hotel and also many locals who come in specifically for a meal. It’s a big operation with many people working in the back. We have to keep everything very organized to make sure the service goes well. We don't use a lot of fancy words to describe what we do. We just focus on the cooking styles that have been around for generations in this city. It’s about keeping those flavors going. The staff here has been around for years and we know how to handle the busy dinner shifts. It is quite a process but we enjoy it. We just keep our heads down and focus on the plates.
