Bebe De Chole Bhature. We are over in Dwarka at the Cosmos CGHS building, Sector 10. It is a flat on the first floor, number six. We decided on the name because it sounds like home. We make chole bhature every day. The morning starts early with the chickpeas. We soak them overnight so they are soft enough to cook. The dough for the bhature takes time too. It needs to sit and rest so it puffs up right in the oil. The kitchen is not very big, just a regular flat kitchen really. It can get a bit crowded when we have a few orders at once. Sometimes the spice smell gets very strong in the living room area. We don't have any fancy machines, just a stove and some big pots. My cousin handles the delivery calls on his mobile. We are right here in Dwarka Phase 1, and the traffic outside can be quite loud during the day. We just focus on getting the food done. We aren't trying to be some big chain. It is just a few of us making food that we know how to make. The neighbors in the building are nice and don't complain about the smells. We close up once the stock is finished for the day. Sometimes that is early, sometimes late. It's just a simple business we run from home. We use regular ingredients we get from the market nearby. No big secrets.
