Vaishnavi Chinese Pure Veg

Our little shop is on Ambarai Road in Sangli, right near the College Corner. It is a spot where there is always something going on because of the students and people moving around that part of town. Vaishnavi Chinese Pure Veg is basically just a simple kitchen where we toss noodles and rice in big woks. We chose to keep everything vegetarian because that is what many people around here prefer. The smell of garlic and soy sauce usually hangs in the air around our entrance. It is a small place, so it gets crowded pretty fast when the college classes let out for the day. We have some basic tables and chairs, nothing too comfortable, just somewhere to sit and eat quickly. The walls have some stains from the steam and the cooking heat, which is just how it goes in a busy kitchen. We get our vegetables from the local market every morning so they are ready by the time we open up. Sangli can be a quiet place, but Ambarai Road stays lively. We don't have a big menu with a hundred items. We just stick to the Chinese dishes we know how to make well enough. It gets quite smoky when the burners are on high, and we are usually rushing to keep up with the orders. It is a noisy, busy place but we like being right there by the corner.
