Maratha Darbar

Our restaurant is located on Civil Hospital Road in Sangli. We’re right in the Shivaji Nagar area, close to Trikoni Garden and Jawahar Chowk. It’s a very active part of town, so there is always something happening outside our door. We’ve been here at this spot for several years now. It’s not a very large place, but we’ve managed to fit in enough tables for the lunch rush. Most of the people who come in are working nearby or visiting the hospital. We don’t have a big team of waiters. It’s usually just me and two other guys handling everything. We start the day by getting the vegetables from the market and prepping the meat. The kitchen is small and gets quite hot during the afternoon, but we have a couple of big fans to help. We don’t use any of those fancy computerized systems for orders; we just write them down on a notepad. Sometimes the handwriting is a bit messy, but we always get the food to the right table. We keep the water jars filled and the glasses clean. It’s a simple operation at Maratha Darbar. We don’t have any of those corporate mission statements. We just want to make sure the food is ready on time and that people aren't waiting too long. The chairs are old and have some scratches, but they are comfortable enough. We’re just a local spot where you can get a meal without any fuss.
