Our place is at Shop Number 489 in the Model Town Shopping Complex in Rewari. Being in a shopping complex means there are always people walking past the windows. Some are out buying clothes or household things, and they stop in when they get hungry. We keep the shop open during the regular hours that the complex is busy. It is not a very large space, but we make it work with the tables we have. We don't have a big marketing team or anything like that. It is just a few of us doing the cooking and the cleaning. We try to keep the floor swept and the water jugs full. Rewari can be quite hot in the summer, so we do what we can to keep the air moving inside the shop. We don't have a fancy menu with photos; we just tell people what we have cooked for the day. Most of our customers are locals who live or work nearby. They know where we are and what to expect when they walk in. We don't try to be something we are not. It is just a simple bhojnalaya where you can get a meal without any trouble. We focus on the daily routine of prepping, cooking, and serving. It is a steady way to spend the day, and we are glad to be part of the Model Town community and see the same faces every week.
