Ananda Dosa

Our small place is located on Gujarat Housing Main Road in Rajkot, right across from where K Krunchy Republic is. If you know Akshar Marg and Amin Marg, you know how busy this corner gets in the evenings. We start getting things ready in the afternoon when the sun is still pretty hot. The tawa takes a while to get to the right temperature. We spend a lot of time standing there, pouring the batter and spreading it out thin. It’s a repetitive job but it keeps us focused. The noise of the traffic on Amin Marg is always there in the background, especially the scooters honking. We have a few simple tables and chairs set out, but they are nothing special. People usually stop by after work or when they are out doing their shopping. Sometimes it gets a bit crowded and people have to wait, but nobody seems to mind too much. We try to keep the sambar hot and the chutney fresh throughout the night. By the time we start cleaning up, the street has finally gotten quiet. The floor usually needs a good scrub because of all the foot traffic. It’s just us and a couple of helpers trying to keep things moving. We aren't trying to do anything complicated, just making dosas the way we always have in this part of town. It’s a lot of standing on your feet and dealing with the steam, but that’s the business we are in every day.
