We've been here in Kondhwa Budruk 1 for a good while now. Most mornings start pretty early with the milk arriving in those big silver cans. You’ll usually see us around the back getting the heavy pans ready for the first boil. It gets really hot in the kitchen, especially when all the burners are going at once and the steam fills up the room. We don't have any fancy decorations or anything. It's just a simple counter and the glass cases for the sweets. People from the neighborhood stop by on their way home from work. Sometimes the school kids come in after their classes looking for something small and cheap. We try to keep the stock fresh, so we don't make huge batches of everything at once. If we run out of something, we just run out and make it again the next day. The floor gets a bit sticky by the afternoon, that's just how it is when you're working with sugar syrup and ghee all day. We do our own frying and mixing right here. It’s not a quiet place, there’s always the sound of the traffic outside and the old fridge humming in the corner. We know most of the faces that walk in and we usually know what they want before they even ask. It’s a very basic setup. Nothing too complicated about what we do. We just make the stuff, put it in the box, and that's it. Sometimes the tea runs out early if we’re busy talking. We just keep going until the shutters go down at night.
