At Shree Narayan Khamang Dhokala in Dhanakawadi 2, we are mostly focused on one thing, and that is the dhokala. We start the steaming process very early so the first batches are soft and warm when people are looking for breakfast. The kitchen is always full of steam, which makes the walls a bit damp, but that is just how it goes when you are making this kind of food. We mix the batter by hand in big plastic tubs, and you have to get the consistency just right or it won't rise properly. Dhanakawadi 2 is a busy place, and we have a lot of people who stop by on their way to work to pick up a small packet for their tiffin. We don't have a huge menu, just a few things we know how to make well. The shop is small and can get pretty hot in the summer because of the steamers, but we just keep the fans going and keep working. We aren't trying to be the biggest shop in town. We just want to make sure the dhokala is yellow and spongy every single morning. There are no fancy signs or uniforms here, just us in our regular clothes doing the cooking. It’s hard work, especially standing on your feet all day, but it’s what we do. We just hope people like what we make and keep coming back to the shop.
