Sai Farsan

Our shop, Sai Farsan, is located in Pimpri 1. We mostly focus on making and selling different kinds of fried snacks. It’s a small place, and most of the space is taken up by the kitchen area where we have the big frying vats. We start work very early in the morning to get the fresh batches of sev, papdi, and gathiya ready. The smell of frying chickpea flour is everywhere. We don't have a place for people to sit and eat. It’s strictly a place where you come to buy snacks by weight. We use simple plastic bags and tie them with a bit of string or a rubber band. The scales we use are old but they work just fine. Pimpri is a busy area, so we get a lot of foot traffic. People stop in on their way home to get something for their evening tea. We try to keep the shop as clean as possible, but when you work with so much flour, there is always a little bit of it on the floor. It’s just me and a couple of helpers. We don't have any big machines, a lot of it is done by hand. We aren't trying to be fancy or corporate. We just make the snacks we know and sell them to our neighbors at a fair price. It’s a lot of heat and hard work, but we’ve been here a long time and the routine stays the same every day.
