Our shop is at 127/1 in the P T Colony area of Pashan. We’ve been making sweets here for a long time. The kitchen is right behind the main counter, so you can usually smell the sugar and the ghee from the street. We start the big pots boiling before dawn so the trays are full by the time people head to work. It’s a small shop, mostly just the display cases and enough room for three or four people to stand. We don't use any machines for the shaping; we do it all by hand on the big wooden tables in the back. My father taught me how to judge the temperature of the syrup just by looking at it. We don't have fancy packaging, just the plain boxes and some string to tie them up. During festival times, the line goes out the door and all the way to the corner. We try to keep up, but sometimes we run out of the popular milk sweets by noon. It’s a lot of standing and stirring, and the heat from the stoves can be tough in the summer. We don't have a website or an app for ordering. If you want something, you just have to come by and see what we made today. It’s a simple way to live.
