We’re based out of M S Palya, specifically at C/1 on the Amba Bhavani Temple Road in Khadki. It’s a bit of a tucked-away spot, but we like it that way. We spend our days preparing various food items that go out to different places. It’s a lot of prep work, starting early when the sun is just coming up. The building isn't anything special to look at, just a practical space where we can get the work done. We have a small crew that knows the routine inside out. Most of us live nearby, so the commute is just a quick walk or a bike ride. We don’t really deal with a lot of walk-in customers since we’re mostly focused on the production side of things. There’s always a lot of washing, chopping, and packing going on. We try to keep the noise down because of the temple nearby, but a kitchen is never truly silent. The air usually smells like whatever we’re cooking that day. We don't use any fancy machinery; it's mostly just knives, pots, and a lot of manual labor. Sometimes things get a bit disorganized when a big order comes in at the last minute, but we always manage to get it out. We’re just a small group of people working hard in Khadki to make sure the food is ready and packed for whoever needs it. That is basically our day.
