If you walk through Hadapsar Barve Nagar, you’ll find us easily enough. Mamata Sweets has been here for a good amount of time. Every morning starts pretty early because the milk arrives before the sun is even up properly. The kitchen gets hot fast, especially when the big vats are going. We make the sweets in batches throughout the day. My brother handles the frying while I look after the customers at the front. Sometimes the floor gets a bit sticky, but we try to keep it as clean as we can. It’s a small shop, so things can get cramped when there’s a festival coming up. During Diwali or Holi, we hardly get any sleep at all. People come in asking for boxes to take to their relatives. We don’t have a big team, just a few guys from the neighborhood who know how to work the dough. Sometimes we run out of certain items by noon, and people get a little annoyed, but that’s just how fresh food works. We don't use a lot of fancy packaging, just the standard cardboard boxes. It’s nothing too special to look at from the outside, but we’re here every day. The neighborhood has changed a lot since we opened, more buildings and more cars now. But the way we make our barfi hasn’t changed much at all. We just keep doing what we know and serving the local folks.
