We have a lot of glass cases filled with different types of mithai. Every day we make fresh batches in the back. The khoya comes in early and we start the process. It is a lot of stirring over big flames. My hands get tired by the end of the shift. We sell a lot of kaju katli and dhokla. People stop their scooters right in front to pick up a box on their way home. It makes the traffic police a bit annoyed sometimes. We try to tell people to park better but they are always in a hurry. The shop floor is tiled and we scrub it every night before we leave. We have a few staff members who have been with us since we opened. They know where everything is kept. We don't use fancy packaging. It is just the standard boxes with our name printed on them. Sometimes the printer misses a spot, but the sweets inside are what matters. We are just a local shop trying to make a living on a busy road. The work is hard but it is steady and we know the neighborhood well now.
