Down here in Bhawani Peth, things are always moving fast. We are at 374, right in the middle of all the noise and the narrow streets. If you’ve been to this part of town, you know how it gets with the carts and the bikes everywhere. Our building isn't anything special to look at, just an old structure where we do all the frying and packing for the chiwda. The smell of the spices hits you as soon as you turn the corner onto our block. We use a lot of oil and large pans, so the heat in the kitchen gets pretty intense during the afternoons. It’s been this way for years. We have guys who have worked here for decades and they don't need any instructions anymore. They just know when the color of the flakes is right. The floor can get a bit slippery if we aren't careful with the oil spills. We pack everything into bags by hand mostly. There’s a constant sound of plastic crinkling and people shouting over the noise of the machines. We get customers dropping by asking if they can buy a small packet, but mostly we are dealing with big batches for the shops. It’s a lot of manual labor, hauling sacks of raw stuff in and then shipping the finished snacks out. We don’t have a fancy waiting room or air conditioning. It’s just honest work in a crowded part of the city.
