Laxmi Sweet Mart is out in Dighi. It’s a quieter part of the area compared to the main city, but it still has its own rhythm. We spend most of our time in the back of the shop where the big kadhais are. Making sweets and snacks is a hot and tiring job. We are usually up before dawn to start frying the morning batches of farsan and preparing the sugar syrups for the sweets. The shop front is where we display everything in glass cases. It’s a simple setup. Dighi has a lot of people who work in the nearby factories or offices, and they often stop by in the evening on their way home. We don't use fancy packaging or have a corporate logo. We just put the stuff in plain bags or boxes. The floor is often a bit sticky from the sugar, and the air always smells like fried dough and ghee. We don't really have a big team, just a few of us doing the cooking and the cleaning. It’s a lot of standing on your feet all day. Some days are slower than others, especially when the weather is bad, but usually, there is a steady trickle of people. We just keep the cases filled and try to stay ahead of the demand. It’s a basic business, and we like the simplicity of just making something and selling it to our neighbors. It keeps us busy and the shop is our second home.
