It’s usually pretty quiet when we first get to the shop on Baner Gill Road. Opposite Aditi Samrudhi is where we’ve set up, right in the heart of Baner Gao. We spend a lot of time just moving trays around and making sure everything looks decent before the first customer walks in. There is always a bit of dust from the road that we have to wipe off the counters every morning. Sometimes the delivery trucks are late and that throws our whole schedule off, but we just deal with it as it comes. People around here know the spot. We don't have a big fancy sign or anything, just the name Kailas Sweets above the door. Most of the staff has been here for a while so we all know how the machines work and who likes their tea with extra sugar in the afternoon. It gets hot in the back where the cooking happens, especially during the summer months. We try to keep things organized but sometimes when it's busy, things get a little messy on the counters. That’s just how it goes in a place like this. We see a lot of familiar faces from the neighborhood coming in for their usual stuff. It’s a simple life running a sweet shop in Baner Gao. We just focus on getting the batches done and keeping the place running. There isn't much more to it than that.
