Hot Chips

The smell of hot oil is the first thing you notice when you get near our spot in Kothrud 7. We spend most of the afternoon standing over the big fryers, slicing potatoes and bananas as fast as we can. It gets really hot in the back, especially during the summer months when there’s no breeze coming through the door. We don’t have a big seating area or anything like that because most people just grab a bag and keep walking. The counter is usually covered in a bit of salt and spice by the time evening rolls around. We make everything right here, so you can see the big heaps of chips waiting to be bagged up. Sometimes the oil spatters on our clothes, but that’s part of the job. Kothrud is a busy place and people are always in a hurry, so we try to keep the bags ready to go. We don’t use any fancy machines to seal the bags, just a small heating wire that sometimes needs a bit of a kick to work. It’s a simple life, just frying and bagging and talking to the regulars who come in every Friday. We don’t have a big menu, just the things we know how to make well. The floor is always a bit slippery from the oil, so we have to be careful when we’re moving the heavy tins around.
