We are over in Hadapsar on N R Road. The shop is called Hot Chips. It’s exactly what it sounds like. We spend most of our time at the large fryers. It gets pretty hot in here, especially in the afternoons. The smell of oil and potatoes is something you just get used to after a while. We go through a lot of bags of potatoes every single day. We slice them up ourselves right here. Sometimes the machines act up and we have to fix them on the fly. It’s a small space, so things can get a bit cramped when we have a few customers waiting. We don't have a seating area or anything fancy. People just come to the counter, get their bags, and go. We try to keep the floor swept, but it’s hard with the salt and the bits that fall. Most of our customers are locals who live nearby or workers heading home. We don't use any special secret recipes, just salt and some spices we mix ourselves. It’s a straightforward job. We open up early to start prepping and stay until the bags are mostly gone. The road outside is always full of traffic, so there’s a lot of noise. We just focus on the heat and the frying. If you’re walking down N R Road, you’ll probably smell us before you see us.
