Gayatri Sweets has been here in Dhayari for a long time now. We started it as a small family thing and we just kept it that way. Every morning starts quite early for us because we have to get the milk and sugar ready before the sun is even up. Making sweets takes a lot of patience and it gets very hot in the kitchen. The work area is always warm, especially in the summer months, but we have gotten used to the heat by now. We make different kinds of pedas and barfis that people usually buy for festivals or just for a treat after dinner. It is a very plain shop with simple glass counters so you can see what we made fresh that day. We don't have a big staff, just a couple of us who know the recipes by heart. Sometimes we run out of certain things before the day is over, so it is better to come in earlier if you can. Dhayari is growing really fast these days and we see a lot of new faces along with the regulars who have been coming for years. We handle everything ourselves, from the actual cooking to the packing in boxes. It gets pretty chaotic during Diwali or the Ganpati festival, but we always manage to get through it somehow. We aren't a big chain or anything corporate, just a local shop near the main road. The floors are stone and the display is basic.
