Choudhary Sweets is located inside the Chinchwad Swiss Plaza. Being in a plaza means we see a lot of people walking by all day. We open up the shutters pretty early and start setting out the trays. The glass cases need a lot of wiping because of the fingerprints. Making sweets involves a lot of sugar and flour, so it gets messy easily. We spend a good part of the evening just sweeping up the floors and washing the big metal trays. It's a lot of repetition. One day is pretty much like the next. We have a few regular customers who come in every week for their favorites. We try to keep the stock fresh, so we don't make huge amounts at one time. If something sells out, it’s just gone for the day. The lights in the plaza are quite bright, which helps people see what we have. Sometimes the air conditioning in the building works well, and sometimes it doesn't. We just deal with it. We don't have a big staff, just a couple of us doing everything from cooking to handling the cash. It gets busy during festivals, and then we barely have time to sit down. But most days it’s just a steady stream of people. We keep the boxes stacked up in the corner to save space. It's a practical setup that works for us and the locals.
