We set up Chocolate Story over at Kalyan Kambana Garden 5 because the area felt right for a little dessert place. It’s not a huge shop, just enough room for the displays and a small area in the back where we do the actual work. Most days, it’s just me and one other person trying to keep up with the orders. We didn't really know what we were doing at first, honestly. We just bought some molds and started experimenting with different flavors we liked. Some worked out great, and some were total disasters that we had to throw away. People in the neighborhood are pretty honest about what they like, which helps us decide what to keep making. It’s quiet in the mornings, but once the schools nearby let out, it gets a bit hectic. We spend a lot of time tempering chocolate, which can be real finicky if the weather isn't right. The humidity around here sometimes makes the chocolate bloom, which is a pain, but we've figured out some tricks over the years. We aren't trying to be some high-end boutique. We just want to offer something sweet for people living around the garden. It's a lot of long hours standing up, and my back usually hurts by the end of the day, but seeing a kid get excited over a simple chocolate bar makes it okay. We're just a small part of the community here, doing our own thing.
