Our snack shop, Balaji Snacks, is tucked away in the Nadakerappa Industrial Estate in Kothrud, specifically at Peenya 2nd Stage 7. It is a busy industrial area so there is always noise from the factories around us. We spend most of our time in the kitchen prepping for the morning and afternoon tea breaks. The stove stays on for most of the day. We make snacks that are easy to eat on the go because the workers around here don't have much time for long breaks. It is a small unit and we have had to learn how to use every inch of space we have. The flour and spices get on everything but that's just part of the job. We start really early, usually before the sun is even up, to get the first batches done. Our counters are stainless steel and we keep them as clean as we can. We don't have a huge variety of items, just the things that people actually want to eat every day. It gets very crowded around 11 o’clock. We know how the regulars like their food, like if they want more salt or if they like it extra spicy. It’s a plain operation with no fancy branding or anything like that. We just focus on making sure the food is hot and ready when the sirens go off for the breaks. It’s hard work but it keeps us busy. We don’t have a website, just people coming in through the door. We like it simple.
