Tandoor Darbar.

We’ve been here on Boring Canal Road for a good while now. It’s a busy spot near Hartali More, so there is always something going on outside our doors at Indira Bhawan. Most days start pretty early when we get the kitchen ready and start cleaning up the tables. We are just a small team of people who know how to work the tandoor and serve the folks who live around Boring Road. It gets quite crowded in the evenings when people are heading home from work. We don't have fancy decorations or anything like that, just enough chairs for people to sit and eat. Sometimes the traffic outside is loud, but that is just part of being in this part of Patna. We see a lot of the same faces every week, mostly students and families from the nearby colonies. The kitchen can get hot, especially in the summer months, but we just keep going. It is a simple setup we have here. We make sure the charcoal is right for the oven and the dough is fresh. Most people just walk in, find a spot, and tell us what they want. It is not complicated. We focus on getting the food out on time without making a big fuss about it. The address is easy to find if you know where the canal road is. We just try to keep things running smooth every day, making sure everyone gets a decent meal without having to wait too long for their order.
