We are located right inside the Vishnu Hotel here in Patna. It's a pretty central spot, so we get all kinds of people coming through. Some are staying at the hotel, others are just passing by on the street and need a meal. It's been a busy few years. I remember when we first set up the tables, we weren't sure if anyone would even notice us. But Patna is a city where people like to eat, so it worked out okay. We keep things pretty simple in the kitchen. No point in making it complicated when people just want a decent plate of food. The staff is mostly local guys who have been with us since the start. We have our fair share of arguments in the back when things get busy, but we always get the food out eventually. The floor can get a bit scuffed up with all the feet walking over it, but we sweep it down every night. It’s just a normal restaurant. We don't do anything special for holidays or anything, we just stay open and keep cooking. It’s a job, and we take it seriously, but we don't go around saying we are the greatest. We just do what we do. Sometimes the power goes out, and we have to scramble, but that's just life in the city. We're just glad to be here at the Vishnu Hotel and have people stop by for their dinner.
